A Sweet Summer Treat: Homemade Vanilla Ice Cream with Berries

Is there anything more nostalgic and summer-coded than a sweet dish of homemade vanilla ice cream? Absolutely not. It’s one of my favorite summer snapshots repeated every year of my life that I can remember. This year, I’m adding a simple, but colorful twist by mixing in organic berries to add the patriotic flavors to my desert. Plus- with two toddlers around, it can be an added bonus to put in a little extra effort in making food, fun.

Here are my go-to ice cream necessities for every summer season. These have proven to be to be staples time and time again when hosting or just enjoying a treat with the family.

Here’s my recipe:

Red, White & Blue Homemade Vanilla Ice Cream

InGREDIENTS

  • 2 cups heavy cream

  • 2 cups whole milk

  • ¾ cup sugar

  • 2 teaspoons vanilla

  • pinch of salt

  • Handful of blueberries, blackberries, and raspberries 

Instructions

  1. Whisk all ingredients together until sugar dissolves.

  2. Pour into the bowl of an ice cream machine. This is my favorite, and what our family uses on weekly basis.

  3. While the ice cream mixture is in the machine, simmer your fruit on low heat with 1/4 cup water for 10 minutes. Strain the water and blend your fruit into your almost complete ice cream mixture. 

  4. ** Your ice cream should be 2-3 minutes away from being finished when you add your fruit in,

  5. IMPORTANT! You don’t want it to mix so much your ice cream turns purple from the fruit dyes. Only mix the fruit in until its spread throughout, but still choppy.

  6. After the ice cream is made, transfer to an airtight container, cover tightly and freeze .
